Coconut Chia Pudding, Camping Dessert

Coconut Chia Pudding

Yet another simple recipe I came up with as a way to consume more chia seeds in the backcountry. As I have mentioned before there are a number of benefits to eating chia. Most important in my books is the large calorie-to-gram ratio and fiber content. This recipe takes the calories even further by adding shredded coconut. I have enjoyed this recipe topped with freeze dried bananas and raspberries. Check it out and let me know what you think!

Coconut Chia Pudding


  • 1/4 Package Instant Vanilla Pudding (26g)
  • 1 Tbs Instant Milk Powder
  • 2 Tbs Chia Seeds
  • 2 Tbs Shredded Coconut
  • 2 Tbs Freeze Dried Fruit (Optional)


    At Home:
  1. Place the instant pudding, powdered milk and chia seeds into a ziplock or mylar bag and seal (with an oxygen absorber if appropriate).
  2. Mark the package to add 1/2 cup water
    On the Trail:
  1. Add 1/2 Cup of filtered water and stir, let sit two minutes to set.

Your recipes look great! I am also moving away from pre-made food for backpacking and am going to try some of your recipes this trip. It looks like they make 2 servings?
