Yet another simple recipe I came up with as a way to consume more chia seeds in the backcountry. As I have mentioned before there are a number of benefits to eating chia. Most important in my books is the large calorie-to-gram ratio and fiber content. This recipe takes the calories even further by adding shredded coconut. I have enjoyed this recipe topped with freeze dried bananas and raspberries. Check it out and let me know what you think!
1/4 Package Instant Vanilla Pudding (26g)
1 Tbs Instant Milk Powder
2 Tbs Chia Seeds
2 Tbs Shredded Coconut
2 Tbs Freeze Dried Fruit (Optional)
Place the instant pudding, powdered milk and chia seeds into a ziplock or mylar bag and seal (with an oxygen absorber if appropriate).
Mark the package to add 1/2 cup water
On the Trail:
Add 1/2 Cup of filtered water and stir, let sit two minutes to set.
